Cos Lettuce and Orange Salad

Description

(serves 6)

This is a refreshing colourful salad. Sliced avocados are a very nice addition.

INGREDIENTS

6-8 generous handfuls cos lettuce leaves

3 oranges (peeled and segmented*)

Orange Vinaigrette

a handful of heartsease

METHOD

Pile lettuce leaves onto a large platter and scatter orange segments over the top.

Drizzle with some of the Orange Vinaigrette and sprinkle with heartsease.

Note: * Retain juice from oranges for vinaigrette. .

Orange Vinaigrette

(makes 200ml, you will need less than half of this)

INGREDIENTS

¼ cup extra virgin olive oil

2 tsp balsamic vinegar

2 tbsp freshly squeezed orange juice

finely grated zest of 1 orange

¼ tsp flaky sea salt

1/8 tsp freshly ground pepper

METHOD

Place ingredients into a bowl and whisk together.
