BUTTERCRUNCH AND APPLE SALAD WITH GOUDA CHEESE
(makes 6 serves)
There are several really excellent versions of New Zealand Gouda cheeses from smaller cheese makers to use in this salad. Look for Meyer Aged Gouda or Karikaas Leyden Gouda. You will find apple syrup in the supermarket or a speciality food stores and it is lovely in a salad dressing.
45ml (3 tbsp) extra virgin olive oil
45ml (3 tbsp) tart apple syrup
5ml (1 tsp) lime juice
flaky sea salt
freshly ground black pepper
juice of 1 lemon
1 Granny Smith apple (quartered and finely sliced)
1-2 Buttercrunch lettuces (washed and dried)
60g gouda cheese (broken into chunks)
In the bowl in which you will serve your salad pour in oil, apple juice and lime juice. Add salt and pepper to taste and combine.
Pour lemon juice over apple slices.
When ready to serve place lettuce leaves and apple slices into bowl with oil. Toss together to evenly coat lettuce in dressing.
Scatter Gouda through lettuce and serve.
