Couscous, Dried Fruit and Mint Salad
Description
(serves 6-8)
Couscous is a version of very small pasta and is made with flour. Packaged couscous is a handy addition to a store cupboard as it is so quick to prepare.
INGREDIENTS
190g (1 cup) couscous (packaged pre-cooked) 250ml (1 cup) boiling water 30g (1/4 cup) sliced almonds (lightly toasted) 50g (1/4 cup) dried apricots (thinly sliced) 45g (1/4 cup) sultanas 2 tsp finely grated orange zest |
1 tbsp thinly sliced mint leaves 1 + 1/2 tsp ground cumin 30ml (2 tbsp) extra virgin olive oil 30ml (2 tbsp) lemon juice 3/4 tsp flaky sea salt 1/4 tsp freshly ground black pepper |
METHOD
· Into a large bowl place couscous and boiling water and stand uncovered for 15 minutes or until all the water is absorbed and couscous has expanded and become soft.
· Fluff couscous with a wide-pronged fork, ensuring all lumps are broken up. Add remaining ingredients and mix together gently until well combined. Season to taste. Serve warm or cold.
