Perfect to serve with scrambled eggs and bacon at this time of the year when tomatoes are not particularly tasty. This method really intensifies the flavour.
INGREDIENTS
400-500g (4 large) round tomatoes 30g (2½ tbsp) brown sugar
10g (2tsp) butter (softened) 1 clove garlic (peeled and crushed)
METHOD
Preheat oven to 100°C.
Cut a 1.5-2cm cavity in the top of each tomato removing the core at the same time*.
Mix butter, brown sugar and garlic to a paste. Push butter mixture into tomato cavity.
Place tomatoes on a baking tray and bake for one hour.
Serve hot or warm.
