STEAK TARTARE ON CROSTINI

Steak Tartare is made with raw beef so it is not for the faint-hearted but once the taste for it is acquired there is no going back.

INGREDIENTS

200g beef fillet (trimmed weight)
1 tbsp extra virgin olive oil
1 tbsp capers, salted or in brine (rinsed)
1 tbsp chopped gherkins
1 tbsp chopped onion
1 tsp chopped Italian parsley

1 anchovy in oil or salt, rinsed and chopped to equal about 2 tsp
2 egg yolk
1 tsp Dijon mustard
dash Tabasco sauce
flaky sea salt and freshly ground black pepper
10 Crostini

METHOD

  • Finely dice beef, approx 3mm square, and place in a bowl.
  • Add oil, capers, gherkins, onion, parsley, anchovy, egg yolks, mustard and Tabasco. Mix together and season to taste with salt and pepper.
  • Generously top Crostini with Steak Tartare and serve immediately.
