Make Brandy Cream just before serving as it deflates quickly. This recipe is part of Chocolate-Dipped Prunes with Brandy Cream

INGREDIENTS

2 egg yolks 20g (2 tbsp) castor sugar

65ml (1/4 cup) brandy
300ml (1 cup + 3 tbsp + 1 tsp) cream (whipped)


METHOD

  • Place egg yolks in a bowl and begin to whisk. Add sugar and then whisk till fluffy.
  • Add brandy, whisk in, then gently fold in cream.
  • Serve immediately.
