VANILLA CREME FRAICHE

(makes 5-6 serves)


Make this light and rich topping as you are about to serve it. Lovely and light to serve with berries, poached fruit or fruit compotes.

INGREDIENTS

150g crème fraîche
1 egg white

1 tsp vanilla sugar, or caster sugar with ½ tsp vanilla extract


METHOD

  • Place crème fraîche into a small bowl and whisk with a fork till smooth.
  • In a second small bowl place egg white and whisk till soft peak stage. Sprinkle sugar over the top and beat egg whites to stiff peak stage.
  • Gently fold egg whites into crème fraîche. Serve immediately.
