TURKEY SALAD IN HERBED BREADCRUMB CUPS

(makes 12 serves)


INGREDIENTS

125ml (1/2 cup) mayonnaise
65ml (1/4 cup) cream
1½ tsp paprika
65g (1/2 cup) macadamias (roasted and roughly chopped)
200g turkey tenderloins (cooked and sliced into 1 cm strips)

2 tsp chopped chervil or tarragon
Maldon sea salt and freshly ground black pepper
Herbed Breadcrumb Cups Crispy Prosciutto

METHOD

  • In a medium size bowl combine mayonnaise, cream, paprika, macadamias, turkey and chervil or tarragon. Add salt and pepper. Stir well.
  • Shortly before service spoon Turkey Salad into Herbed Breadcrumb.
