This salsa gives a fresh taste and texture to corn soup. This recipe goes with Creamy Corn Soup with Tomato Salsa
1 corn cob
1/2 roasted or grilled red pepper (skin removed and diced)
1 tomato (peeled, seeded and diced)
10 basil leaves (finely sliced)
Maldon sea salt freshly ground black pepper
- Run a sharp knife down corn cob to remove kernels. Discard cob.
- In a small bowl place kernels, red pepper, tomato and basil and stir to combine. Add seasoning to taste.
