Cuisine magazine’s Food Editor Ray McVinnie travels the culinary world extensively, but at heart his favourite theme is Italian/Mediterranean food. In fact, he is just back from Italy. As he told Masterchef contestants, good food is about loving and understanding quality ingredients, and treating them with knowledge, care and respect. The same principles apply at home as in top restaurants. An intuitive as well as a knowledgeable cook, Ray enjoys simple, often spontaneous and rustic food inspired by perfectly ripe vegetables or succulent seafood. This goes with that and a dash of something unexpected in the McVinnie household – try to keep up as he rattles off variations and inspired ideas. Celebrating the classic flavours and infinite variety of Mediterranean warmth and centuries of culinary history, Ray will serve up his own favourites, a few new twists and oodles of top tips to take home, with a side of wry observations.
