Together, James and Belinda Stapley are inspired by their garden and the natural lake and mountain Lodge setting; inspirations they will share together as a team. Great food is an essential element of a luxury lodge and with chef James and gardener Belinda Whare Kea Lodge has it nailed. Forbes Life magazine wrote "The food is remarkable, pure, elemental and as clean tasting as the water outside." It’s also as beautifully presented as the views outside. Englishman James is slightly more modest, describing his style as "modern, produce driven, changing all the time. It’s fine dining using modern techniques but inspired by garden and nature ". Their combined contribution was a happy accident after New Zealander Belinda noticed that James was buying in expensive speciality greens and vegetables. She offered to expand their home garden as a closer source especially for her heirloom tomatoes. James says a big advantage of the Lodge is that he meets the guests and often prepares something especially for individual tastes. Having such a garden immediately to hand is a huge benefit to chef and guests alike. James and Belinda will jointly present this class, interweaving their story and their food as they do every day. He will introduce fine dining techniques and ideas you can use at home and she will take you on her inspirational gardening journey.
