He answers questions readily, so that less-experienced bakers gain confidence and knowledge about why things happen with baking the way they do, and how to fix the inevitable hiccups. This is a one-weekend only opportunity to watch, taste and learn from a master.  A New Zealander, Dean is now based in Denmark with businesses in Singapore and London plus consulting projects world-wide. Despite travelling almost constantly he has written 13 baking books and made 12 TV programmes, as well as demonstrating his craft in person all over the world. Ruth has persuaded him to fit these demonstration classes into his schedule, after the Melbourne Food & Wine Festival Masterclasses.  Dean’s theme is based around the Danish coffee break, which Danes take with enthusiasm. Naturally Danish pastries will be included with all their versatility, and a range of cakes, rolls and sandwich bread to cover different techniques and styles.  And there’s a special treat: Crosstown Doughnuts for morning tea. These classy and creative doughnuts have taken London by storm in recent months, developed by Dean and fellow New Zealand chef Peter Gordon. Te Horo is so much closer than London for a doughnut indulgence ....
