SUN-DRIED TOMATO PESTO
2 cloves garlic (peeled)
25g pine nuts
195g sun-dried tomatoes (drained & chopped-reserve oil)
1/2 cup Italian parsley (roughly chopped)
juice of 2 limes
1/2 small red chilli (deseeded and chopped)
1/2 tbsp tomato paste
20ml reserved sun-dried tomato oil
Maldon sea salt and fresh ground pepper
- In the food processor, fitted with a metal blade, place garlic, pine nuts, sun-dried tomatoes, Italian parsley, lime juice, chilli and tomato paste and process until mixture resembles a paste.
- Through feed tube, with processor going, slowly add reserved sun-dried tomato oil and season to taste.
