Strawberries with Limoncello and Basil
This idea was given to me by a cooking school friend who says it is her summer standby. She couldn’t remember where she got the idea from. Limoncello is a lemon flavoured liqueur from Italy traditionally drunk very chilled after dinner to settle the stomach. Serve these strawberries over vanilla ice cream if you wish but they are extremely refreshing as is.
500g strawberries hulled, cored and cut into quarters
10-12 basil leaves
65ml (¼ cup) Limoncello (chilled)
Place strawberries into a medium sized serving bowl.
Add basil and drizzle with Limoncello.
Leave to macerate for 15-20 minutes.
Serve at room temperature.
