SLOW ROASTED TOMATO HALVES
Description

This recipe forms part of the Barbecued Steak Sandwiches with Sundried Tomato Pesto recipe.
INGREDIENTS
10 basil leaves
3 tbsp olive oil
8 tomatoes (cored and halved)
flaky sea salt and freshly ground pepper
METHOD
- Tear basil leaves and place in oil.
- Preheat oven to 160oC.
- Brush baking tray with oil. Place tomatoes on baking tray, drizzle with oil, distributing basil leaves over tomatoes. Sprinkle with salt and pepper.
- Bake in preheated oven for 1 hour till tomatoes have softened and slightly wizened.
- Serve immediately or cool and chill for up to three days.
