SLOW ROASTED TOMATO HALVES

This recipe forms part of the Barbecued Steak Sandwiches with Sundried Tomato Pesto recipe.


INGREDIENTS

10 basil leaves
3 tbsp olive oil

8 tomatoes (cored and halved)
flaky sea salt and freshly ground pepper


METHOD

  • Tear basil leaves and place in oil.
  • Preheat oven to 160oC.
  • Brush baking tray with oil. Place tomatoes on baking tray, drizzle with oil, distributing basil leaves over tomatoes. Sprinkle with salt and pepper.
  • Bake in preheated oven for 1 hour till tomatoes have softened and slightly wizened.
  • Serve immediately or cool and chill for up to three days.
