Pink Sugar Drop Cookies
(makes 96 cookies)
Halve this recipe if you wish however homemade cookies are always an appreciated gift.
375ml (1 + 1/2 cups) salad or vegetable oil
400g (2 cups) sugar
2 tsp vanilla extract
700g (5 cups) flour
1 tbsp baking powder 1 + 1/2 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp pink food colouring
extra sugar for rolling & sprinkling
Preheat oven to 180ºC.
Line baking trays with baking paper or teflon sheets.
Place oil and sugar in a bowl and beat till well blended.
Add eggs and vanilla and beat well. Mix flour, baking powder, salt, cinnamon and nutmeg in a separate bowl.
Add flour mixture (all at once) to oil and sugar mixture and beat well.
•Add food colouring and combine.
Shape dough into 1.5cm balls and roll in sugar. Place balls spaced out on prepared tray, press Silicone Cookie Stamp onto each ball and sprinkle with sugar.
Place in oven for 10-12 minutes or till lightly golden.
Remove cookies from trays to cool and store in an airtight container.
