Tony is a crowd favourite at Springfield, with his extraordinary range of culinary expertise and the ability to share it easily. If anyone can make dim sum sexy, it’s Tony. He says that "at a Chinese yum cha lunch, dim sum come in hundreds of varieties. Although the Cantonese are best known for these delectable morsels, they are also enjoyed in other parts of China, with regional specialities”. He remembers making his first siu mai (pork dim sum) when barely 10 years old. Tony’s class will explore a wide range of dim sum versions.
