SCENTED CARAMELIZED ORANGES
As part of Kiwifruit Rata Honey Ice Cream Stack
1 orange (juiced)
100g (1½ cup) sugar
10g (coin size piece) root ginger (peeled & julienned)
10g (1 stalk) lemongrass (trimmed & julienned)
40g (2 tbsp) passionfruit pulp
- Peel oranges, removing all pith from the fruit. Using a sharp knife, remove segments from oranges and set aside in a bowl.
- Place orange juice and sugar into a small saucepan and heat on a low heat, stir with a metal spoon until dissolved.
- Increase heat to medium and without stirring, cook until it bubbles and achieves a golden brown colour.
- Pour into a metal bowl, add ginger, lemongrass, passionfruit and orange segments. Set aside to cool.
