Ruth’s Barbecue Rules: Barbecues are all about relaxation and having a good time, with good food. The food has to taste terrific, but cannot be fussy. It doesn’t have to be totally meaty, while boring salads are a crime against humanity. Less is usually more, so focus on a few big items and don‘t stress over endless fiddly offerings. Variety is welcome, and condiments are your secret weapon. The host and hostess have to enjoy the barbecue too. This rule is unbreakable. Keeping it simple and borrowing a restaurant rule of advance preparation dramatically reduces time and energy on food after your guests have arrived. And then there are the rules about the actual cooking, gleaned from Ruth’s experience with literally thousands of barbecues. You have to go to the class to get those, but rest assured her techniques and tips are invaluable.   Sunday 12 April 2015 10.00am - 4.00pm, morning tea will be served from 9.15am Photo Credit: Murray Lloyd
