ROASTED DATE AND PROSCIUTTO WRAPS WITH ROCKET ORANGE SALAD AND TANGY ORANGE DRESSING
To give this entrée or light lunch dish more visual appeal Gary and David at Taste always skewer the fifth date wrap with an orange segment on a long knotted end skewer and place it in the centre of the salad.
10 fresh dates (available in the produce section of the supermarket)
5 slices prosciutto, each slice cut into 4 (David & Gary use a New Zealand brand, Luscutto)
1 tbsp clarified butter
4 handfuls rocket leaves
2 oranges (peeled and segmented)
- Preheat oven to 180°C.
- Halve dates lengthwise and remove stone. Wrap each date half in prosciutto.
- Place clarified butter in an ovenproof frypan over a medium heat to melt and add date halves, tossing to coat in butter, and cook for 3-4 minutes or till there is a little browning. Transfer frypan to oven and continue cooking for 4-5 minutes or till prosciutto is crisp and dates are warmed through.
- Plie rocket leaves into centre of serving plates and scatter orange segments on top. Place date wraps (5 per serve) onto salad and drizzle with Tangy Orange Dressing.
