RED WINE VINEGAR DRESSING
(makes 135 ml)
This is an excellent all purpose standby dressing for salads requiring a bit of grunt. Use as dressing for potato salad and incorporate crispy bacon or left over chopped chicken or beef. It is an ideal salad dressing if you are using just one type of salad green with no add ins but still want a punchy salad. If you have some leftover bread oven bake as opposed to fry some small cubes of bread for croutons.
75ml (5 tbsp) olive oil
30ml (2 tbsp) red wine vinegar
2 tbsp Dijon mustard
2 cloves garlic (finely chopped)
1+1/2 tsp flaky sea salt
1/2 tsp freshly ground black pepper
- Into a small bowl place oil, vinegar, mustard, garlic, salt and pepper and whisk to combine.
- Store covered in the refrigerator for up to 2 weeks. Let stand at room temperature before serving.
