RATA HONEY ICE CREAM
(Makes 2 litres)
As part of Kiwifruit Rata Honey Ice Cream Stack
150mL (2/3 cup) Rata honey
8 egg yolks
600mL cream (lightly whipped)
- Wet a medium sized plastic container*1 and line with plastic wrap. Smooth out the wrinkles with a pastry brush.
- Place honey into a small saucepan and bring to the boil. Boil for 2 minutes over a medium heat (be careful that it does not burn).
- Put egg yolks into a bowl, whisk until thick and whitish. Gradually pour in hot honey whisking continuously at high speed until the mixture has cooled (the mixture should be whitish in colour and double it's volume).
- Fold in whipped cream and pour into prepared container. Cover with plastic wrap and freeze overnight*2.
Note*1: The container will need to be 6cm in depth.
Note*2: You will need to make the Rata Honey Ice Cream at least 1 day ahead.
