Oven Style Paella with Fish and Prawns

(serves 5)


A very quick to put together paella baked in a cazuela. For this recipe you require a 28cm cazuela with 2.5 litres volume.


INGREDIENTS

1 tsp saffron threads

30ml (2 tbsp) hot water

200g (1 cup) Calasparra paella rice

30ml (2 tbsp) olive oil

180g (1) onion (finely diced)

100g (1 small) yellow pepper (cut into 1cm dice)

 

100g (1 small) red pepper (cut into 1cm dice)

80g (2 stalks) celery (cut into 5mm slices)

1 clove garlic (finely chopped)

500ml (2 cups) vegetable or fish stock (hot)

1 sprig parsley

1 sprig thyme

1 sprig oregano

1 bay leaf

600g fish fillet (preferably a firm fish )

(cut into 10 even-sized chunks)

 

1 whole garlic bulb (cut top off to expose garlic cloves and blanch for 15 minutes)

 

200g (10) prawns {we use peeled prawns with tails on}

15ml (1 tbsp) olive oil (2nd measure)


METHOD

  • Preheat oven to 180°C.
  • Place saffron and water into a small bowl, cover with plastic wrap and leave to soak for a minimum of 20 minutes.
  • Place rice into 28 cm cazuela with 2.5 litre volume.
  • Pour oil into a heavy-based frypan and set over a medium heat. Add onion and cook for 3-4 minutes or till soft.
  • Add peppers and celery and cook for a further 2 minutes. Add chopped garlic, stir well and cook for 1 minute.
  • Pour in stock and add parsley, thyme, oregano, bay leaf and saffron together with the soaking liquid.
  • Bring to the boil and immediately pour over rice.
  • Using the back of a spoon, distribute rice and vegetables to make an even layer.
  • Arrange fish pieces into cazuela and submerge under the stock.
  • Sit whole garlic bulb into centre of cazuela. Place into preheated oven and cook for 20 minutes or till rice is tender and fish is cooked.
  • Remove from oven and carefully remove herb sprigs and bay leaf without disturbing the rice too much. Cover with aluminium foil and rest at room temperature for 10 minutes.
  • Place prawns onto low-sided tray with second measure olive oil. Toss to coat and cook in preheated oven for 3-4 minutes or till tender and cooked through.
  • Arrange prawns on top of Oven Style Paella with Fish and Prawns and serve cazuela to the table.
