MILK INFUSION

Description

This is used in Daniel's Cheddar Sauce.

INGREDIENTS

500ml (2 cups) milk
1/2 onion (cut in half)
2 parsley stalks

1 bay leaf
1 tsp black peppercorns

METHOD

  • Place milk, onion, parsley stalks, bay leaf and peppercorns into a pot over a medium heat and bring to the boil.
  • Reduce heat and simmer for 5 minutes.
  • Remove from heat and allow to stand for 1 hour to infuse. Pour milk through a sieve to remove aromatics.
