MICHAEL LEE-RICHARDS' CHOCOLATE CARAMEL MARTINIS WITH PRALINE WALNUTS
(makes 6 martini glass versions or increase number of servings
by presenting tiny versions in eggcups or ramekins)
Michael gave me this recipe which was his mother's and an Easter treat as a Clayton's Easter egg. A warning: it is a very rich dessert.
- Chop 24 Praline Walnuts and place in base of each martini glass with 2 tbsp Caramel and then top with Chocolate Ganache. Leave to set.
- These can be plastic wrapped and stored in the refrigerator but remove half-an-hour before serving to allow them to come back to room temperature.
- As you serve top each serving with a teaspoon of Caramel and top with a Praline Walnut.
