Melon, Blueberry and Raspberry Fruit Salad with Triple Sec and Opal Basil
(makes 6 serves)
315g watermelon (skin and pips removed and cut into 2cm dice)
390g rock melon (skin and pips removed and cut into 2cm dice) Alternatively when available you could use Honey Dew Melon
40g (4Tbsp) sugar
150ml Triple Sec
8g Opal basil (sliced)
Place watermelon, rock melon and blueberries into a bowl.
Add sugar and pour over Triple Sec, stir to combine.
Leave to sit at room temperature for 30 minutes for flavours to infuse and sugar to dissolve.
Add raspberries and basil and gently combine. Leave to sit at room temperature for a further 5 minutes. Serve immediately.
