Our stunning hot, dry summer has been a cracker and reminded Ruth of long hot days in Greece. She reckons by April we might enjoy a gorgeous late-summer reminder of the simple pleasures of good food, simply cooked but positively packed with summery flavour.
To give you a hint of Te Horo-turned-Greek Isles, allow your imagination to drift. Think pink flash-fried prawns and lamb cooked low and slow for hours so it’s nearly melting. Think tomatoes, lots and lots of tomatoes bursting with ripeness. Think sun umbrellas and lazy glasses of wine, possibly even a tang of retsina. Smashing plates? Not so much, sorry.
