Little Popovers with Sour Cream and Salmon Caviar

(makes 12)

 

Called Popovers because they do pop over the tin.  If you are entertaining a crowd at brunch this is an excllent dish to pass around while guests are mingling before the main event.

 

INGREDIENTS

 

1 egg (lightly whisked)

70g (½ cup) flour (sifted)

¼ tsp salt

125ml (½ cup) milk

15g (1 tbsp) melted butter

125g sour cream

1 jar Salmon Caviar

 

 

METHOD

 

  • Prepare baby muffin tins. We use baking spray.

 

  • Put egg, flour, salt milk and melted butter in a bowl and mix with a wooden spoon.

 

  • Pour mixture into prepared baby muffin tins, filling muffin tins only to two-thirds full.

 

  • Place popovers in a cold oven.

 

  • Set oven to 200ºC and bake for 15-20 minutes until golden brown.

 

  • Place tray on a cooking rack, remove popovers from tins and top warmed popovers with a heaped teaspoon of sour cream and a dollop of Salmon Caviar.
