Lemon Syrup


(makes 160ml)




100g (1/2 cup) sugar

65ml (1/4 cup) water

70ml (1/4 cup plus 1 tsp) lemon juice




  • Place sugar and water into a small pot set over a low heat and stir until sugar is dissolved.
  •  Add lemon juice and bring to the boil.  Boil for 1 minute.
  •  Remove from heat and set aside to cool.

Used to make Lemon Olive Oil Cakes with Lemon Drizzle and Vanilla Cream.
