ICED LYCHEE AND MINT COCKTAIL
Guests who don't drink alcohol become very tired of orange juice. Surprise them with a very special non-alcoholic drink such as this. This refreshing cocktail was a specialty of the now closed, but always thoughtful, Anise Restaurant in Cuba Street.
5 lychees (from a can)
15 mint leaves
10ml (2 tsp) lime juice
30ml (2 tbsp) lychee juice (from can) scoop of ice
- Place lychees, mint, lime juice, lychee juice and ice in a blender and blend until ice is crushed and mint is chopped.
- Pour into a chilled glass and serve immediately.
