Green Beans with Lemon Infused Olive Oil
When beans are at their best the simplest preparation wins out. Serve with everything!
1/2 teaspoon salt
freshly ground black pepper
Bring a large pot of water to the boil and add salt.
Plunge beans into boiling water and cook, uncovered until just past ‘al dente.’ I like my beans tooth tender and not crunchy. Drain water from beans.
If you are not serving immediately, line a bowl with a cold wet tea towel and place hot undressed, but drained beans into the bowl. Bring edges of the tea towel up to cover the beans. Beans will remain green and hot for up to 30 minutes held this way.
Just before serving drizzle with Lemon Infused Olive Oil, add salt and pepper to taste and gently toss together.
