CRANBERRY AND ORANGE RELISH

Description

This isn't a preserve. It is a fresh tasting relish which will keep for up to 1 week sealed in the refrigerator. It also works well as an accompaniment with barbecued chicken or pork.

INGREDIENTS

190g (1) orange ( pips removed and roughly chopped)
125g (1) apple (peeled, cored and roughly chopped)
25g (1/4) lemon (pips removed and roughly chopped)

220g (2 cups) cranberries (fresh if you can get them, or thawed frozen, or rehydrated dried)
100g (1/2 cup) brown sugar
55g (1/2) cup walnuts (roughly chopped)


METHOD

  • In a food processor fitted with a metal blade add orange, apple and lemon. Process until roughly chopped.
  • Add cranberries and process until all fruit is finely chopped but not smooth. Transfer mixture to a bowl.
  • Stir in sugar and walnuts till combined. Store covered in refrigerator for up to one week.
