(enough to fill one 23cm tart)

35g unsalted butter
25ml (1 tbsp + 2 tsp) apple syrup (tart or sweet)
80g (6 tbsp + 2 tsp) brown sugar
1/2 tsp vanilla extract
150g (1 + 1/2 cups) walnut halves
- Place butter, apple syrup and brown sugar into a medium pot and over a gentle heat, stir till sugar is dissolved. Increase heat and boil for 1 minute
- Remove pot from heat and add vanilla and walnut halves. Stir well to coat all walnuts in caramel.
- Use within 10 minutes of making otherwise the caramel will firm up and walnuts will clump together.
