BRANDY CREAM WITH EGG
(24 tiny serves or 8 dessert serves)
Make Brandy Cream just before serving as it deflates quickly. This recipe is part of Chocolate-Dipped Prunes with Brandy Cream
2 egg yolks 20g (2 tbsp) castor sugar
65ml (1/4 cup) brandy
300ml (1 cup + 3 tbsp + 1 tsp) cream (whipped)
- Place egg yolks in a bowl and begin to whisk. Add sugar and then whisk till fluffy.
- Add brandy, whisk in, then gently fold in cream.
- Serve immediately.
