Travelling chefs including Rick Stein have discovered Basque culinary delights, especially San Sebastian, and enthusiastically spread word of this unique region and its food. Laurent says "The cuisine is influenced by the plentiful sea on one side and the land and mountains on the other for the meat and vegetables (a bit like New Zealand or Kapiti Coast!)”. Pintxos (pronounced Pinchos) are the hugely popular Basque version of tapas. Many a visitor has spent happy evenings strolling between pintxos bars grazing on small morsels of tasty local delicacies. Think seafood, chorizo, capsicums, pork .. all these good things will be included with Laurent’s own special touch. There are rumours of a Basque-style paella, which apparently is different from Spanish paella. Who knew? Most importantly, the food ideas and techniques will be shared with Laurent’s love of food, cooking, hospitality and eating the results; and all in his delightful French accent.
