BARBECUED STEAK SANDWICHES WITH SUN-DRIED TOMATO PESTO

(makes 10 serves)

For hearty eaters allow two sandwiches each, particularly if serving for a main course.

INGREDIENTS

10 Barbecued Flatbread with Sun-Dried Tomato Pesto
60ml-75ml (4-5 tbsp) Sandwich Mayonnaise
10 lettuce leaves

10 Barbecued Rib Eye Steaks
10 Slow Roasted Tomato Halves
flaky sea salt
freshly ground black pepper

METHOD

  • While flatbreads are still warm, pinch the two ends together to expose the centre and the Sundried Tomato Pesto.
  • Spread a layer of mayonnaise on one of the centre sides.
  • Fill centre of flatbread with lettuce, a warm Barbecued Rib Eye Steak and a Slow Roasted Tomato half. Season to taste with salt and pepper.
  • Serve immediately with lots of napkins, encouraging guests to eat with their hands.
