7 APR 2018: Have chef’s knife, will travel. Popular presenter Julie Le Clerc is an inveterate traveller, and India is a favourite destination.
As consultant chef at the 5-star Lodhi hotel in New Delhi, Julie spent two seasons training local staff in modern European recipes. With typical culinary curiosity, she also acquired a detailed knowledge of Indian regional cuisines.
Julie says “after many trips to India over 35 years, I recently found in Tamil Nadu, South India, the best Indian food I’ve ever tasted. Every dish was light and fragrant with layers of flavour and unique elements of surprise. Coconut and rice grow in abundance in the region and are stables of this cuisine. Dishes are uncommonly subtle and delightfully aromatic (not chilli-hot), a heritage of the centuries-old spice trade. Along the way, traders also picked up some Sri Lankan and south-east Asian influences and added these to their cuisine. Authentic food from this region remains one of India’s best-kept secrets”.
