VANILLA CREME FRAICHE
(makes 5-6 serves)
Make this light and rich topping as you are about to serve it. Lovely and light to serve with berries, poached fruit or fruit compotes.
150g crème fraîche
1 egg white
1 teaspoon sugar with ½ teaspoon vanilla extract
Place crème fraîche into a small bowl and whisk with a fork till smooth.
In a second small bowl place egg white and whisk till soft peak stage. Sprinkle sugar over the top and beat egg whites to stiff peak stage.
Gently fold egg whites into crème fraîche. Serve immediately.
