MASHED POTATOES FOR POTATO TOPPED PIES

This is part of Potato Top Meat Pies recipe.

INGREDIENTS

750g potatoes* (peeled and chopped)
25g (2½ tbsp) butter (diced)
30ml (2 tbsp) cream
1 egg yolk (beaten)

freshly grated nutmeg
Maldon sea salt
freshly ground black pepper

METHOD

  • Steam potatoes until tender.
  • Place potatoes in a bowl and mash with double masher.
  • Add butter, cream, half of egg yolk, nutmeg, salt and pepper to taste. Beat with a blending fork until smooth and fluffy.

* Preferably Agria potatoes.
