Malaysian-born, French-trained and Australian-based chef/food writer Tony Tan explores this vibrant city through 80 exquisite dishes, in his latest book.  He explores everything from cutting-edge contemporary to traditional, at the same time weaving the background stories to the dishes and techniques only the insiders know.
