Oven Roasted Asparagus with Parmesan Mayonnaise

(serves 8)

This is a lovely way to present asparagus to serve with drinks but it also works well as the vegetable accompaniment with steak or roast chicken. Increase the amount of asparagus if serving as part of a meal.

INGREDIENTS

600g-630g (24) evenly sized asparagus (fibrous ends snapped off)

30ml (2 tbsp) extra virgin olive oil

½ tsp flaky sea salt

¼ tsp freshly ground black pepper

Parmesan Mayonnaise

METHOD

· Preheat oven to 180°C.

· Place asparagus onto a bun tray, drizzle with oil and sprinkle with salt and pepper. Toss till asparagus is coated in oil and then spread asparagus out so that stems are not touching.

· Place into preheated oven and cook for 8-12 minutes {cooking time will vary according to thickness of asparagus} or till beginning to soften but still firm to the bite and colour is bright green. The aim is to not brown the asparagus.

· Remove from oven and transfer to a platter. Serve hot or warm with Parmesan Mayonnaise.
