Paul and I extend our very best Christmas and festive season wishes to you all, with thanks and appreciation for the fine food and good cheer we have shared during 2010. We’ve come up with a couple of tried and true suggestions to streamline or solve your Christmas gift conundrums: a classic gift voucher (covering anything from cooking school to catering) and my tasty cake. For your reference, both Ruth Pretty Catering and Kitchen Shop will be closed for the Christmas break from 5pm on Wednesday 22 December and re-open at 8am Wednesday 19 January 2011.

Weddings
Celebrating in summery style
Alex and Tom wanted "a fun and relaxed summer garden wedding in the country, particularly as many of our guests were travelling from cold, grey and snowy London. We also wanted our guests to enjoy delicious food and excellent New Zealand wine”.
They chose Springfield, Ruth and Paul’s gracious property in Te Horo as venue for both ceremony and wedding feast. When Alex had the idea the ceremony could be held beneath a shady and dignified row of Claret Ash, Ruth’s staff took photos and emailed them to Alex and Tom in London so they could visualise the look. She added simple yet effective white paper lanterns to decorate the area, ably hung on the day by Tom and his brothers. The late afternoon ceremony was followed by Pimms, champagne and jazz on the lawn, and the many nooks and crannies of the grounds provided photo opportunities.

I first saw these little delights packaged in a small corner grocery store in the old town of Seville and had to buy a box. I shared them with the friends we were travelling with who insisted that I came up with a recipe for them when I returned home and here it is. Makes 30.

High tea for lunch
As trip organiser for the Otaki PROBUS club, Tony Ellis hit exactly the right note in November when members enjoyed Ruth’s High Tea in the Garden Room at Springfield. So much so, he recommends the experience to other groups.
PROBUS (Professional Business Active Retirees) members cover diverse interests, so trips must appeal to many tastes and circumstances. Tony’s group enjoyed morning coffee, Springfield edible garden tour and a High Tea lunch with the bonus of a welcome from Ruth and a demonstration. Young chef Ben preceded each ‘course’ of little sandwiches, tiny pies and cute cupcakes presented on traditional tiered stands with a "how to” explanation and display. "For our group of 35 the price was very reasonable and our members were delighted with the experience,” he said.

Wellington airport rocks
Keen to be creative and a little edgy, Wellington Airport’s Wild at Heart branding extended to catering for the recent opening of its latest international terminal expansion, The Rock.
Ruth Pretty Catering served 250 guests Brûléed Pumpkin Custards with Pistachio Fairy Floss as a tongue-in-cheek reference to one of the terminal’s informal descriptions - pumpkins. "We had a lot of fun coming up with something unusual and edgy to serve, and feedback about the pumpkin brûlée was great,” she said.

Investiture
Ruth said afterwards that "the ceremony was very elegant and I felt very proud to be part of it. The Governor General had a private word to each recipient, which was very special and thoughtful as his comments were custom made for everyone.”
"The next evening I had the pleasure of dining at Vogel House, the Governor General’s temporary residence while Government House is being renovated, and decided being on the receiving end of a formal dinner is as gratifying as cooking one. "The dinner that evening was world class. The chef showcased New Zealand produce such as snapper and scallops in a very natural but sophisticated way. I was impressed by the whole event and especially the Rhubarb Crème Brûlée which was to die for!”
